    Silver-Dollar Pancakes with Vanilla Bean Sugar

    â—¦ ¾ cup plus 1 tablespoon all-purpose flour
    â—¦ ¼ cup plus 2 tablespoons confectioners' sugar
    â—¦ 2 tablespoons cornstarch
    â—¦ 1 ½ teaspoons baking powder
    â—¦ ½ teaspoon kosher salt
    â—¦ â…› teaspoon baking soda
    â—¦ ½ cup plus 2 tablespoons milk
    â—¦ 3 ½ tablespoons unsalted butter, melted, plus more for greasing
    â—¦ ½ teaspoon vanilla extract
    â—¦ 1 large egg
    â—¦ 2 tablespoons superfine sugar
    â—¦ ½ vanilla bean, split lengthwise and seeds scraped

    Recipe

    Preheat the oven to 200° F.

    Sift the flour, 2 tablespoons confectioners' sugar, the cornstarch, baking powder, salt, and baking soda into a medium bowl; whisk until smooth. Add the milk, 1 ½ tablespoons of the melted butter, the vanilla, and egg and whisk until the batter just comes together (there will be some lumps). Let the batter rest for 5 minutes.

    Meanwhile, combine the superfine sugar and vanilla bean seeds in a small bowl and rub with your fingers until the seeds are evenly distributed. Stir in the remaining ¼ cup confectioners' sugar.

    Heat a large nonstick skillet over medium heat. Grease the skillet generously with some butter, then pour 1 heaping tablespoon of the batter into the pan to make a silver-dollar-size pancake; repeat with the remaining batter just to fill the skillet. Cook until the pancakes are golden brown on the bottom and bubbly on top, 45 to 60 seconds. Using a spatula, flip the pancakes and cook until the batter is cooked through, 30 to 45 seconds more.

    Transfer the pancakes to a serving plate, cover with a kitchen towel, and keep warm in the oven while you make the remaining pancakes. Once all the pancakes are made, arrange them on the warm serving plate and drizzle with the remaining 2 tablespoons melted butter. Sprinkle the vanilla bean sugar over the pancakes and serve.

    Makes about 16 pancakes
