Simple Cheese Omelette

"Feel free to fill the omelette with just about anything you can imagine. But make sure your filling is not cold; too often people add cold meats and vegetables and try to overcompensate by overcooking the eggs. The trick is to warm the filling a bit before adding it to the eggs. Cheese is a different story, as it doesn't take much heat to melt it. Any cheese you have on hand will be wonderful in an omelette."
List of Ingredients
â—¦ 1 teaspoon olive oil
â—¦ 4 eggs, beaten
â—¦ Salt
â—¦ Freshly ground black pepper
â—¦ ¼ cup grated or crumbled cheese
Recipe
Make sure to have all of your ingredients ready to go and near the stove. Heat the olive oil in a small skillet over medium-high heat. Season the beaten eggs with salt and pepper.
Pour the eggs into the skillet, stirring faster than for scrambled eggs, forming small curds of cooked eggs. Continue stirring until the eggs have cooked about halfway through. Then add the cheese or other filling on top of the eggs.
Allow the eggs to rest away from the heat for a moment to cook further, then tilt the pan downward and use the spatula to roll the omelette over and onto a plate.
