    Spicy Breakfast Sausage and Cheese Bake

    Recipe Introduction

    "Southerners love a good breakfast casserole as a change from ordinary eggs with fried bacon, sausage, or country ham, and nothing fits the bill better than this simple sausage bake spiked with a few green chile peppers (or, in the Georgia Lowcountry, local bird's-eye hot red peppers). Double the recipe and use a larger baking dish or casserole, and you'll have a perfect addition to a breakfast or brunch buffet. Do be sure that the sausage is top quality and relatively lean, and that the cheddar is sharp—if not extra sharp."

    List of Ingredients

    â—¦ 1 pound bulk pork sausage
    â—¦ 12 large eggs
    â—¦ ¾ cup milk
    â—¦ Salt and freshly ground black pepper to taste
    â—¦ One 4-ounce can green chile peppers, drained and chopped
    â—¦ ¼ pound sharp cheddar cheese, grated

    Recipe

    Preheat the oven to 325° F. Grease a 1 ½-quart baking dish or casserole and set aside.

    In a large skillet, break up the sausage, fry over moderate heat till fully cooked, and drain on paper towels. In a bowl, whisk together the eggs, milk, and salt and pepper till well blended.

    Scatter the sausage over the bottom of the prepared baking dish, pour the egg mixture over the sausage, sprinkle the chiles and cheese evenly over the top, and bake till golden, 20 to 25 minutes. Serve piping hot.

    Makes 4 servings
