    Steel-Cut Oats

    Recipe Introduction

    "Steel-cut oats deliver such satisfaction and sustenance that you might just fall in love with oatmeal in a way you never thought possible. Cooked on the stovetop to a creamy and toothsome balance, they are heartier than their rolled-oat counterparts, and arguably healthier too. But it's the richer flavor you're likely to love most of all. To cut back on their cooking time, soak your grains in water in the pot the night before, and turn on the heat when you press the little go button on your coffee machine the next morningguaranteed goodness, before you've finished the morning paper."

    List of Ingredients

    ◦ 1 cup steel-cut oats
    ◦ 3 cups water
    ◦ cup whole milk, plus more as needed
    ◦ Pinch of sea or kosher salt
    ◦ 1 cinnamon stick
    ◦ ⅓ cup raisins (optional)
    ◦ 1 tablespoon unsalted butter
    ◦ Agave nectar, honey, or brown sugar
    ◦ Milk or buttermilk (optional)
    ◦ Blueberries, shredded apple, sliced bananas, or pears

    Recipe

    Combine the oats, water, whole milk, salt, cinnamon stick, and raisins (if using) in a large pot over medium heat. Bring to a simmer and immediately decrease the heat to medium-low. Keep the oatmeal at a low simmer until the oats are just tender, about 25 minutes. Add additional milk to thin to the consistency you prefer and stir for another 5 minutes.

    Stir in the butter.
    Divide between individual bowls and top with your favorite sweetener, a drizzle of milk, and blueberries, shredded apple, sliced bananas, or pears.

    Serves 4





    ❧ P.S.
    This makes enough for two people for 2 days. Pack leftovers in a container and store in the fridge. Reheat in the microwave the next morning on medium power for about 2 minutes and stir in a little additional milk to loosen.
