List of Ingredients
- 1/2 lb. sausage, bulk or link
- 1 small Granny Smith apple, cored, seeded and diced
- 10 eggs
- 1/4 tsp salt
- Freshly ground black pepper to taste
- 4 tsp butter
- 1-1/2 cups grated Monterey jack cheese
Instructions
- In a skillet, cook the sausage and apple together unti lthe sausage is cooked through and the apple is tender; drain well. Set aside.
- Whisk together the eggs, salt and pepper. Place 1 teaspoon butter in a nonstick omelet pan.
- Add one-quarter of the egg mixture, and cook until almost set. Sprinkle with one-quarter of the cheese and one-quarter of the sausage mixture. Remove from the heat, slide onto a plate and fold in half. Keep warm. Repeat for the remaining omelets.
Makes 4 servings.
