    List of Ingredients


    • 1/2 lb. sausage, bulk or link
    • 1 small Granny Smith apple, cored, seeded and diced
    • 10 eggs
    • 1/4 tsp salt
    • Freshly ground black pepper to taste
    • 4 tsp butter
    • 1-1/2 cups grated Monterey jack cheese


    Instructions


    1. In a skillet, cook the sausage and apple together unti lthe sausage is cooked through and the apple is tender; drain well. Set aside.

    2. Whisk together the eggs, salt and pepper. Place 1 teaspoon butter in a nonstick omelet pan.

    3. Add one-quarter of the egg mixture, and cook until almost set. Sprinkle with one-quarter of the cheese and one-quarter of the sausage mixture. Remove from the heat, slide onto a plate and fold in half. Keep warm. Repeat for the remaining omelets.

      Makes 4 servings.
