    Strawberry Shortcake Muffins

    List of Ingredients


    • 2 cups all-purpose flour
    • 2 tsp baking powder
    • ¾ cup sugar
    • 1 stick cold butter, cut into cubes
    • 1 egg
    • 1 tsp vanilla
    • 1 cup heavy cream
    • 1½ cups diced fresh strawberries
    • Powdered sugar, for dusting


    Instructions


    1. Preheat oven to 350°F. Grease or line 12 muffin cups with paper liners.

    2. In a large bowl, whisk together flour, baking powder, and sugar. Cut in cold butter with a pastry blender or two knives until small pea-size pieces. In a small bowl, mix together egg, vanilla, and cream. Add this mixture all at once to flour mixture. Stir with a spoon just until blended. Gently mix in strawberries.

    3. Spoon batter into prepared muffin cups, making sure each muffin has some strawberries in it, and bake 22 to 25 minutes, or until a tester inserted in center comes out clean. Cool completely in pan before removing, as they are very soft while warm. Sprinkle with powdered sugar once cooled.

      Makes 12 muffins
