    Sunday Morning Scramble

    From "The Complete Southern Cookbook" by Tammy Algood

    List of Ingredients


    • 5 eggs
    • 1 Tbsp milk
    • 1 Tbsp chopped fresh chives
    • 1 Tbsp chopped fresh parsley
    • ¼ tsp salt
    • ¼ tsp black pepper
    • 3 Tbsp unsalted butter


    Instructions


    1. In a medium bowl, whisk together the eggs, milk, chives, parsley, salt, and pepper.

    2. Place the butter in a large skillet over medium-high heat. Allow it to melt and bubble, but not brown.

    3. Add the egg mixture, whisking gently into the butter. Allow the eggs to almost set, and then whisk again, and cook to the desired degree of doneness. Serve immediately.

      Makes 2 servings.
