Syrup: Bing Cherry Syrup

In a saucepan over high heat, combine ½ cup firmly packed light brown sugar, ½ cup granulated sugar, and 1 cup water and bring to a boil, stirring to dissolve the sugar.
Boil for 5 minutes, stirring constantly. Add 1½ cups pitted Bing cherries, reduce the heat to medium-low, and simmer until the cherries are cooked, 8 to 10 minutes.
Stir in 1 teaspoon pure almond extract and simmer for 2 minutes longer. Let cool. Use on pancakes, waffles, or French toast, or wrap the drained cherries in crepes and drizzle with the syrup.
