Syrup: Brown Sugar, Cinnamon, and Walnut Syrup

List of Ingredients
• 1 cup loosely packed light brown sugar
• 1 cup granulated sugar
• ¼ cup light corn syrup
• 2 cups water, or more as needed
• 1 cinnamon stick (2 inches)
• 3 Tbsp butter
• 1½ Tbsp finely chopped walnuts or pecans
Recipe
Combine the sugars in a heavy saucepan.
Add the corn syrup, water, and cinnamon stick. Simmer until a syrup has formed, 10 to 12 minutes. Add a little more water if the syrup becomes too thick.
Discard the cinnamon stick and add the butter and nuts. Simmer a minute, and serve warm.
Makes 1¾ cups
• The corn syrup is used to help prevent the syrup from crystallizing. If the syrup should crystallize upon standing, add a little water and lemon juice, or a pinch of cream of tartar, and boil again for a few minutes.
