Toffee Apple French Toast

- 8 cups French bread, sliced into 1-inch cubes and divided
- 2 Granny Smith apples, cored, peeled and chopped
- One 8-ounce package cream cheese, softened
- ¾ cup brown sugar, packed
- ¼ cup sugar
- 1¾ cup milk, divided
- 2 tsp vanilla extract, divided
- ½ cup toffee or almond brickle baking bits
- 5 eggs, beaten
Instructions
- Place half the bread cubes in a greased 13- x 9-inch baking pan; top with apples and set aside.
- In a medium bowl, beat cream cheese, sugars, ¼ cup milk, and 1 teaspoon vanilla until smooth. Stir in baking bits and spread over apples. Top with remaining bread cubes. In a separate bowl, beat eggs with remaining milk and vanilla; pour over bread. Cover and refrigerate for 8 hours or overnight.
- Remove from refrigerator 30 minutes before baking. Uncover and bake at 350° F for 35 to 45 minutes, until a knife inserted near the center comes out clean.
Makes 8 servings.
