    Waffles with Blackberry Syrup

    Source of Recipe

From "Paula Deen's Southern Cooking Bible"

    List of Ingredients

    • Blackberry Syrup:
    • 1-3/4 cups (7 ounces) frozen blackberries
    • 1/2 cup sugar
    • Juice of 1/2 lemon
    • .
    • Waffles:
    • 2-2/3 cups all-purpose flour
    • 2-1/2 Tbsp sugar
    • 1 Tbsp baking powder
    • 1-1/4 tsp salt
    • 2 cups whole milk
    • 2-3/4 sticks butter, melted
    • 4 large eggs

    Instructions

    1. To make the blackberry syrup:
In a medium saucepan, combine the blackberries, sugar, and 2 tablespoons water. Bring to a boil over medium heat. Reduce the heat to a simmer and cook for 15 minutes to reduce slightly. Add the lemon juice. You can refrigerate the syrup, but warm before serving.

    2. To make the waffles:
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a medium bowl, whisk together the milk, melted butter, and eggs until combined. Using a rubber spatula, fold the milk mixture into the flour mixture just until combined. Preheat a standard-size electric waffle iron according to manufacturer's instructions. Give it a spray with cooking spray.

    3. Pour a scant 1 cup of batter into the waffle iron; cook until golden brown and crispy on both sides, 5 to 6 minutes. Serve hot, topped with warm blackberry syrup.

      Makes 7 to 8 waffles.
