    List of Ingredients


    • 1/2 lb. spicy sausage
    • 6 large eggs
    • 3 Tbsp milk
    • 1/4 tsp salt
    • 2 Tbsp butter or margarine
    • 1/4 cup chopped red onion
    • 1/4 cup chopped Anaheim or green bell pepper
    • 1/2 cup shredded Monterey Jack cheese
    • 1/2 cup diced fresh tomato
    • Flour tortillas
    • Prepared salsa


    Instructions


    1. In a medium skillet, fry the sausage, breaking it up with a spoon, until browned. Drain sausage on paper towels; drain grease from the skillet and wipe with paper towels.

    2. In a small bowl, beat the eggs with the milk and salt.

    3. Over medium-high heat, melt the butter in the skillet and fry the onion and peppers until tender, stirring, about 4 minutes. Reduce heat to medium-low, and add the egg mixture. Cook until mixture begins to set on the bottom. Stir gently and continue to cook and stir occasionally until the eggs are thickened but still quite moist. Add the cheese and stir until cheese is melted. Add sausage and heat briefly. Top with chopped tomatoes and serve with warmed flour tortillas and salsa.

      Serves 2 to 3
