Blackberry-White Chocolate Bars

- Vegetable cooking spray
- 1/2 cup (1 stick) butter or margarine
- 1 (12-ounce) pkg. white chocolate chips (2 cups), divided
- 2 eggs
- 1/2 cup sugar
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1 tsp almond extract
- 1/2 cup blackberry jam
- 1/4 cup sliced almonds, toasted
Instructions
- Heat oven to 325 degrees (F). Liberally spray a 9-inch square baking pan with vegetable cooking spray.
- Melt the butter or margarine in a pan over medium-low heat. Remove from heat and add 1 cup white chocolate chips. Let stand; do not stir.
- In a large bowl, beat the eggs until foamy. Gradually add sugar, beating at high speed until lemon-colored. Stir in white chocolate-butter mixture. Add flour, salt and almond extract; mix on low speed until just combined. Spread half of the batter (about 1 cup) in the prepared pan. Bake in the preheated oven 20 minutes, or until light golden brown. Remove from the oven.
- Melt the jam in a small saucepan over low heat. Spread evenly over the warm, partly baked crust.
- Stir the remaining 1 cup chocolate chips into the remaining batter. Gently spoon over the jam; some of the jam will show through. Sprinkle with almonds. Return pan to the oven and bake an additional 30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before cutting into bars.
Makes 20 bars.
