    Butterscotch Bars

    Recipe Introduction

    "We frequently turn to this bar whenever we are looking for new and exciting pickup sweets to put on a cocktail menu. There are so many chocolate and lemon desserts that repeatedly appear on buffets, so it's nice to have a change of pace, and this butterscotch bar really fits the bill."

    List of Ingredients

    ◦ cup packed light brown sugar
    ◦ cup (4 ounces) unsalted butter, softened
    ◦ 1 cups all-purpose flour
    ◦ teaspoon salt

    ◦ 1 cup butterscotch chips
    ◦ cup dark corn syrup
    ◦ 2 tablespoons (1 ounce) unsalted butter
    ◦ 1 tablespoon water
    ◦ teaspoon salt
    ◦ 2 cups coarsely chopped walnuts


    Prepare the crust:
    Preheat the oven to 375 F. Beat together the sugar and butter with an electric mixer at medium speed until well blended. Add the flour and salt, and beat until a dough is formed. Press into an ungreased 13 x 9-inch baking pan. Bake in the preheated oven for 10 minutes.

    Prepare the topping:
    Combine the butterscotch chips, corn syrup, butter, 1 tablespoon water, and salt in a microwave-safe bowl. Microwave on high 45 seconds, and then stir well. If needed, microwave for another 30 seconds; stir until smooth. Stir in the chopped walnuts until combined.

    Spread the topping evenly over the crust, and bake in the preheated oven until bubbly, about 10 minutes. Let cool 5 minutes. Score the bars while warm. Let cool 20 minutes, and then cut into bars. Freeze, if desired.
