    Butterscotch Coffee Spice Bars

    From "Gooseberry Patch Christmas: 10th Anniversary"

    List of Ingredients


    • 1 cup brown sugar, packed
    • ½ cup shortening
    • 1 egg
    • ½ cup hot water
    • 1 tsp instant coffee granules
    • 2 cups all-purpose flour
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • ½ tsp cinnamon
    • 1 cup butterscotch chips
    • ½ cup chopped nuts


    Instructions


    1. Combine brown sugar, shortening and egg; beat until creamy. Mix hot water and instant coffee; blend into creamed mixture.

    2. Stir together flour, baking powder, baking soda, salt and cinnamon; gradually stir into creamed mixture. Add butterscotch chips and nuts; mix well.

    3. Spread in greased and floured 13x9x2-inch pan. Bake at 350° F for 25 to 30 minutes. Cool; cut into bars.

      Makes 2 dozen.
