Cherry-Apricot Crumble Bars

- 3 cups quick-cooking oats
- 1 cup all-purpose flour
- 1 cup sugar
- ½ tsp baking soda
- ¼ tsp salt
- 1/8 tsp ground nutmeg
- ¾ cup butter, melted
- 1 (21-ounce) can cherry pie filling
- 2/3 cup chopped dried apricots
Instructions
- Preheat oven to 350° F. Line a 13-x-9-inch baking pan with foil, extending ends of foil over edges of pan approximately 2 inches.
- In a large bowl, combine oats, flour, sugar, baking soda, salt and nutmeg. Add melted butter, tossing to combine. Reserve 1 cup of crumble mixture. Press remaining mixture into bottom of prepared pan. Bake until set, 12 to 14 minutes.
- In a small bowl, combine pie filling and apricots. Gently spread cherry mixture over crust. Sprinkle with reserved 1 cup crumble mixture. Bake until lightly browned and bubbly, 30 to 35 minutes. Let cool completely on a wire rack. Remove from pan by lifting foil edges. Cut into squares to serve.
Makes 1 dozen bars.
