Chocolate Toffee Bars

- 1-3/4 cups all-purpose flour
- 1/4 cup sugar
- 7 Tbsp butter, cut up (no substitutes)
- 1 large egg
- 1 tsp water
- 1/2 tsp vanilla extract

- -- Toffee Layer --
- 2 cups chopped walnuts
- 1 cup sugar
- 1/2 cup heavy or whipping cream
- 3/4 cup butter, cut into 12 pieces (no substitutes)

- 4 ounces semisweet chocolate squares, melted
Instructions
- Heat oven to 375 degrees (F). Line a 13x9-inch baking pan with foil.
- Make the crust: Process flour, sugar, and butter in a food processor until coarse crumbs form. Add egg, water, and vanilla and process -- pulsing -- until the dough begins to form a ball. Pat dough into prepared pan and bake 20 to 25 minutes, until golden. Cool completely in pan on a wire rack.
- Make toffee layer: Reduce oven temperature to 350 degrees (F). Spread walnuts on a baking sheet in a single layer and bake for 8 to 10 minutes, until lightly browned and fragrant. Cool. Place sugar in a large, heavy skillet and cook 8 to 10 minutes, swirling pan occasionally, until completely melted and syrup is a deep caramel color. With a long-handled spoon, quickly and carefully stir in the cream until smooth (mixture may bubble rapidly). Stir in butter, 3 pieces at a time, until melted. Stir in walnuts. Immediately pour mixture over the cooled crust. Spread evenly and let stand until toffee layer is completely cooled.
- Spread melted chocolate evenly over the toffee layer. Refrigerate bars for 1 hour, until chocolate sets.
Cut into 2x1-inch bars.
Makes 54 bars.
