    Chocolate Cherry Cream Brownies

    • 1 cup butter, cut up
    • 4 ounces unsweetened chocolate, chopped
    • 1¾ cups sugar
    • 4 eggs
    • 1 cup flour
    • ½ tsp salt
    • ½ cup chopped walnuts
    • ½ cup chopped maraschino cherries (reserve juice)

    • Glaze (recipe follows)


    Instructions


    1. Preheat oven to 350° F. Grease a 9- x 13-inch pan.
      In a small saucepan, melt butter and chocolate. Place sugar in a bowl, add chocolate mixture, and whisk to combine. Add eggs, one at a time; mix until smooth.

    2. In another bowl, combine flour and salt; stir into chocolate mixture, then stir in walnuts and cherries. Spread mixture into prepared pan. Bake 25 to 30 minutes. Cool on a wire rack.

    3. When brownies are cool, spread cream layer on top. Drizzle glaze over the top.

      Makes 2½ dozen brownies.



      • CREAM LAYER
      In a pan, melt ½ cup butter; allow to brown for 5 to 7 minutes. Pour into a bowl and add 4 cups confectioners' sugar, 1/8 to 1/4 cup whipping cream, 1/8 cup chopped maraschino cherries, 2 teaspoons cherry juice, and 2 teaspoons vanilla extract.

      • GLAZE
      Melt 2 squares of semisweet chocolate with 1 tablespoon of butter.
