Cinnamon Fudge Brownies

- 1/2 cup flour
- 1/8 tsp salt
- 1-1/2 tsp ground cinnamon
- 1/3 cup unsalted butter
- 2 Tbsp brewed coffee
- 1/2 cup plus 2 Tbsp sugar
- 6 ounces bittersweet chocolate, coarsely chopped
- 1 tsp vanilla
- 2 large eggs
- 1/2 cup chopped walnuts
Instructions
- Lightly butter and flour an 8x8-inch baking pan. Sift together the flour, salt and cinnamon. Set aside.
- In a medium saucepan, combine the butter, coffee and sugar. Place over medium heat and stir until the sugar has dissolved. Bring to a boil, stirring occasionally. Remove from the heat, add the chopped chocolate and stir with a whisk until smooth. Stir in the vanilla and let cool for about 3 minutes.
- Beat in the eggs, one at a time, until you have a thick, glossy batter. Stir in the dry ingredients with a rubber spatula. Fold in the nuts and transfer the batter to the prepared pan. Bake in a preheated 325-degree oven 30 to 35 minutes, until the brownies test done. Cool on a rack before cutting.
Makes 16 brownies.
