    Coffee Brownies

    From "The Silver Palate Good Times Cookbook"

    List of Ingredients


    • 1 pound dark brown sugar (2-1/3 cups)
    • 1½ sticks unsalted butter (¾ cup)
    • 2 Tbsp strong instant coffee powder
    • 1 Tbsp hot water
    • 2 eggs
    • 2 Tbsp vanilla extract
    • 2 cups unbleached or all-purpose flour
    • 2 tsp baking powder
    • ½ tsp salt
    • 1 cup chopped pecans
    • 1 cup semisweet chocolate bits


    Instructions


    1. Preheat oven to 350° F.
      In a medium microwave-safe bowl or saucepan, heat sugar and butter until butter melts. In a small separate bowl, dissolve coffee in hot water. Stir into sugar mixture. Cool to room temperature
      Beat in eggs and vanilla.

    2. In a separate medium bowl, sift together flour, baking powder and salt. Stir dry ingredients into butter mixture with wooden spoon. Stir in pecans and chocolate bits.

    3. Spread evenly into buttered 2-quart baking dish or 9- x 13-inch pan.
      Bake about 30 minutes, or until a wooden pick inserted in center comes out clean. Cool and cut into squares.

      Makes about 20 brownies.
