Coffee Brownies

List of Ingredients
- 1 pound dark brown sugar (2-1/3 cups)
- 1½ sticks unsalted butter (¾ cup)
- 2 Tbsp strong instant coffee powder
- 1 Tbsp hot water
- 2 eggs
- 2 Tbsp vanilla extract
- 2 cups unbleached or all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup chopped pecans
- 1 cup semisweet chocolate bits
Instructions
- Preheat oven to 350° F.
In a medium microwave-safe bowl or saucepan, heat sugar and butter until butter melts. In a small separate bowl, dissolve coffee in hot water. Stir into sugar mixture. Cool to room temperature
Beat in eggs and vanilla.
- In a separate medium bowl, sift together flour, baking powder and salt. Stir dry ingredients into butter mixture with wooden spoon. Stir in pecans and chocolate bits.
- Spread evenly into buttered 2-quart baking dish or 9- x 13-inch pan.
Bake about 30 minutes, or until a wooden pick inserted in center comes out clean. Cool and cut into squares.
Makes about 20 brownies.
