    List of Ingredients


    • 1/2 cup unsalted butter, softened
    • 1-1/2 cups firmly packed dark brown sugar
    • 2 large eggs, at room temperature
    • 1 Tbsp vanilla
    • 1 cup flour
    • 1/8 tsp salt
    • 3/4 cup coarsely chopped pecans
    • 1/2 cup semisweet chocolate chips
    • 1 cup grated carrots


    Instructions


    1. Grease a 9-inch square baking pan and set aside. In a large bowl, with an electric mixer, cream the butter and brown sugar until fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition.

    2. Beat in the vanilla. On low speed, add the flour and salt and beat only until mixed. Scrape down the sides of the bowl with a rubber spatula and, continuing on low speed or by hand, fold in the pecans, chocolate chips and grated carrots. Mix until thoroughly combined.

    3. Pour the batter into the prepared pan and bake in the center of a preheated 350-degree (F) oven for 40 minutes, or until a tester inserted in the center comes out clean. Allow to cool completely in the pan before cutting into 16 squares.

      Makes 16 squares.
