    Hollywood Blondies

    List of Ingredients


    • 3/4 cup chopped pecans
    • 1/2 cup butter
    • 3/4 cup firmly packed light brown sugar
    • 2 large eggs
    • 1 Tbsp corn syrup
    • 2 tsp vanilla extract
    • 1 cup all-purpose flour
    • 1/2 tsp baking powder
    • 1/8 tsp salt
    • 1/4 cup butterscotch chips


    Instructions


    1. Heat oven to 350 degrees (F). Line an 8x8-inch baking pan with foil (leaving a 1/2-inch overhang on each side) and coat with nonstick cooking spray. Set aside. Arrange pecans in a single layer on a cookie sheet and bake until toasted and fragrant, 5 to 7 minutes. Set aside.

    2. In a large, heavy-bottomed saucepan, melt butter over medium heat. Remove from heat and stir in brown sugar until smooth and well blended (you should have no lumps). Let cool 10 minutes.

    3. With a wooden spoon, add eggs, corn syrup and vanilla until mixed. With a wire whisk, add in flour, baking powder and salt until well blended. Stir in pecans and chips. Spread batter into prepared pan and bake until a toothpick inserted in center of blondies comes out clean, about 28 to 30 minutes. Cool completely in pan on a wire rack. Lift blondies out of pan by the foil edges, then peel off foil. Cut into 2-inch squares.

      Makes 16 blondies.
