Hollywood Blondies

- 3/4 cup chopped pecans
- 1/2 cup butter
- 3/4 cup firmly packed light brown sugar
- 2 large eggs
- 1 Tbsp corn syrup
- 2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1/4 cup butterscotch chips
Instructions
- Heat oven to 350 degrees (F). Line an 8x8-inch baking pan with foil (leaving a 1/2-inch overhang on each side) and coat with nonstick cooking spray. Set aside. Arrange pecans in a single layer on a cookie sheet and bake until toasted and fragrant, 5 to 7 minutes. Set aside.
- In a large, heavy-bottomed saucepan, melt butter over medium heat. Remove from heat and stir in brown sugar until smooth and well blended (you should have no lumps). Let cool 10 minutes.
- With a wooden spoon, add eggs, corn syrup and vanilla until mixed. With a wire whisk, add in flour, baking powder and salt until well blended. Stir in pecans and chips. Spread batter into prepared pan and bake until a toothpick inserted in center of blondies comes out clean, about 28 to 30 minutes. Cool completely in pan on a wire rack. Lift blondies out of pan by the foil edges, then peel off foil. Cut into 2-inch squares.
Makes 16 blondies.
