    Key Lime Coconut Bars

    List of Ingredients


    • 2 cups flour
    • 1/2 cup powdered sugar
    • 1 cup butter, at room temperature
    • 4 eggs
    • 2 cups sugar
    • 4 Tbsp flour
    • 1/2 tsp baking powder
    • 5 Tbsp Key lime juice
    • 1-1/2 cups grated coconut
    • 1 tsp grated zest of Key lime or regular lime
    • Powdered sugar and toasted coconut, for garnish


    Instructions


    1. Grease and lightly flour a 9x13-inch baking pan. In a food processor, combine 2 cups flour, 1/2 cup powdered sugar, and the butter. Pat evenly into pan. Bake in a preheated 350-degree oven for 15 minutes. Reduce heat to 325 degrees.

    2. Beat eggs in a medium bowl. Add sugar, 4 tablespoons flour, baking powder, Key lime juice, coconut and lime zest. Stir until well-mixed. Pour mixture over crust.

    3. Bake in preheated 325-degree oven until top is firm, about 35 minutes. Let cool slightly. Sprinkle with powdered sugar and toasted coconut.

      Cut while still a little warm.

      Makes 36 bars.
