    Lemon Butter Bars

    List of Ingredients


    • 2 cups unsifted flour
    • 1 cup unsalted butter, softened
    • 1/2 cup (plus 1 Tbsp) powdered sugar
    • 4 eggs
    • 2 cups sugar (granulated)
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 2/3 cup fresh squeezed lemon juice


    Instructions


    1. Preheat oven to 350 degrees (F).

    2. Beat together flour, butter, and 1/2 cup powdered sugar until well blended. Press mixture into the bottom of a 13x9-inch baking pan. Bake until golden brown, 25 to 30 minutes.

    3. Beat eggs, granulated sugar, baking powder, salt, and lemon juice until smooth; pour over the hot crust.

    4. Bake for 15 minutes longer or until bubbly and lightly browned. Cool completely in pan on wire rack. Dust lightly with remaining powdered sugar. Cut into bars and use a small spatula to lift from pan.

      To store, keep in an airtight container at room temperature.

      Makes 40 bars.
