Lemon Butter Bars

- 2 cups unsifted flour
- 1 cup unsalted butter, softened
- 1/2 cup (plus 1 Tbsp) powdered sugar
- 4 eggs
- 2 cups sugar (granulated)
- 1 tsp baking powder
- 1/2 tsp salt
- 2/3 cup fresh squeezed lemon juice
Instructions
- Preheat oven to 350 degrees (F).
- Beat together flour, butter, and 1/2 cup powdered sugar until well blended. Press mixture into the bottom of a 13x9-inch baking pan. Bake until golden brown, 25 to 30 minutes.
- Beat eggs, granulated sugar, baking powder, salt, and lemon juice until smooth; pour over the hot crust.
- Bake for 15 minutes longer or until bubbly and lightly browned. Cool completely in pan on wire rack. Dust lightly with remaining powdered sugar. Cut into bars and use a small spatula to lift from pan.
To store, keep in an airtight container at room temperature.
Makes 40 bars.
