    Macadamia Nut Lime Squares

    List of Ingredients


    • 2-1/2 cups crushed sugar cookies
    • 1/2 cup finely chopped macadamia nuts
    • 6 Tbsp butter, melted
    • 1-3/4 cups sugar
    • 1/4 cup all-purpose flour
    • 3/4 tsp baking powder
    • 4 large eggs, lightly beaten
    • 1/4 cup fresh lime juice
    • 2 tsp lime zest


    Instructions


    1. Preheat oven to 350° F. Lightly grease a 13x9x2-inch baking pan.

    2. In a medium bowl, combine cookie crumbs, nuts and melted butter. Press firmly into bottom of prepared pan. Bake 12 minutes, or until lightly browned.

    3. In a medium bowl, combine sugar, flour and baking powder. In a small bowl, whisk together eggs, lime juice and zest; add to sugar mixture, whisking to combine. Pour over hot baked crust, and bake 20 minutes, or until center is set.

      Makes 2 dozen.
