Macadamia Nut Lime Squares

List of Ingredients
- 2-1/2 cups crushed sugar cookies
- 1/2 cup finely chopped macadamia nuts
- 6 Tbsp butter, melted
- 1-3/4 cups sugar
- 1/4 cup all-purpose flour
- 3/4 tsp baking powder
- 4 large eggs, lightly beaten
- 1/4 cup fresh lime juice
- 2 tsp lime zest
Instructions
- Preheat oven to 350° F. Lightly grease a 13x9x2-inch baking pan.
- In a medium bowl, combine cookie crumbs, nuts and melted butter. Press firmly into bottom of prepared pan. Bake 12 minutes, or until lightly browned.
- In a medium bowl, combine sugar, flour and baking powder. In a small bowl, whisk together eggs, lime juice and zest; add to sugar mixture, whisking to combine. Pour over hot baked crust, and bake 20 minutes, or until center is set.
Makes 2 dozen.
