Mint Brownies

- 1 cup granulated sugar
- 1 cup butter, softened
- 4 eggs
- 1 (16-ounce) can chocolate-flavored syrup
- 1 cup all-purpose flour
- ½ tsp baking powder
- 2 cups powdered sugar
- 2 Tbsp milk
- 1 tsp peppermint extract
- 2 to 3 drops green food coloring
- 1 cup semisweet chocolate chips
- ½ cup butter
Instructions
- Preheat oven to 350° F. Grease a 15x10x1-inch baking pan; set aside.
For crust, in a large mixing bowl, beat granulated sugar and ½ cup of the softened butter with an electric mixer on medium speed until light and fluffy. Beat in eggs, chocolate syrup, flour, and baking powder until combined. Spread batter in prepared pan. Bake for 25 minutes. Cool completely on a wire rack.
- For filling, in a medium mixing bowl, beat together powdered sugar and the remaining ½ cup softened butter with an electric mixer on medium speed until smooth. Beat in milk and peppermint extract. Tint with enough green food coloring to make a pleasant color. Spread filling evenly over the cooled crust. Chill about 30 minutes, or until filling is firm.
- For glaze, in a small saucepan, combine chocolate chips and the ½ cup butter. Heat and stir over low heat until smooth. Pour evenly over the chilled mint filling. Chill until firm. Cut into bars.
Makes 25 brownies.
