    Mint Chocolate Bars

    List of Ingredients


    • -- Bottom Layer --
    • 1/2 cup flour
    • 1/4 tsp salt
    • 1/2 cup unsalted butter
    • 2 ounces unsweetened chocolate, chopped
    • 1 cup sugar
    • 2 eggs

    • -- Topping --
    • 3 Tbsp unsalted butter, at room temperature
    • 2 Tbsp milk
    • 1-1/2 cups sifted powdered sugar
    • 1/2 tsp peppermint extract
    • Green food coloring
    • .
    • -- Glaze --
    • 2 Tbsp unsalted butter
    • 1 Tbsp milk
    • 2 ounces high-quality semisweet chocolate, chopped


    Instructions


    1. Preheat oven to 350 degrees (F). Grease and flour a 9-inch square baking pan, or lightly spray with nonstick cooking spray; set aside.

    2. To prepare the bottom layer: Combine the flour and salt; set aside. In a small saucepan over low heat, melt the butter and chocolate, stirring until blended and smooth. Set aside to cool. With an electric mixer, beat the sugar and eggs until thick and pale. Add the cooled chocolate mixture and beat well. Gradually add the flour, blending well after each addition.

      When mixed, spread evenly in the prepared pan. Bake 20 to 24 minutes, until a toothpick inserted in the center comes out clean. Let cool completely on a rack.

    3. To make the topping: In a medium bowl, beat together the butter, milk and powdered sugar until smooth. Beat in peppermint extract and just a little food coloring to make a pale green. Spread evenly over the cooled dough. Cover with plastic wrap and chill until the topping is firm.

    4. To make the glaze: In a small saucepan over low heat, melt butter, milk and chocolate, stirring until smooth. Drizzle over the topping, spreading evenly with a thin spatula. Cover and chill until firm.

      Run a sharp knife around the edge of the pan, then cut into 20 bars. Keep refrigerated until ready to serve.

      Makes 20 bars.
