    No-Bake Chocolate Peanut Bars

    List of Ingredients


    • Nonstick cooking spray
    • 3/4 cup (1-1/2 sticks) unsalted butter
    • 1 cup sugar
    • 2 eggs, beaten
    • 1 tsp vanilla extract
    • 2-1/2 cups graham-cracker crumbs
    • 1 cup semisweet chocolate chips
    • 1/4 cup smooth or crunchy peanut butter
    • 1/4 cup chopped roasted peanuts


    Instructions


    1. Spray a 9-inch square baking pan with cooking spray and set aside.

    2. In a large saucepan over low heat, melt the butter. Remove the pan from the heat. Add the sugar and stir well. Add the eggs, stir well and return to medium-low heat. Cook, stirring constantly, until the mixture begins to bubble. Continue cooking and stirring for about 5 more minutes, until thickened. Let the mixture cool.

    3. Stir in the vanilla, then the graham cracker crumbs. Spread the mixture evenly in the prepared pan. Refrigerate 30 minutes, or until firm.

    4. In a small saucepan, melt and stir the chocolate chips and peanut butter until blended. Spread the glaze evenly on the chilled dough. Sprinkle with the chopped nuts. Return the pan to the refrigerator until firm.

    5. Using a sharp knife dipped in hot water, cut into 25 squares, wiping the knife blade between cuts. The hotter the knife, the easier the cutting will be. Refrigerate the cookies until needed.

      Makes 25 bars.
