Oatmeal Cinnamon Chip Bar Cookies

- Nonstick cooking spray
- 1-1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- 1/8 tsp ground allspice
- 1 cup (2 sticks) butter or margarine, softened
- 1 cup packed light brown sugar
- 1/3 cup granulated sugar
- 2 eggs
- 1-1/2 tsp vanilla extract
- 2-1/2 cups quick-cooking oats
- 1 (10-ounce) pkg. cinnamon chips
- 3/4 cup raisins
Instructions
- Spray a 9x13-inch baking pan with cooking spray and set aside. Preheat oven to 350 degrees (F).
- Sift together the flour, soda, nutmeg, cinnamon and allspice; set aside. With an electric mixer on medium speed, cream together the butter and sugars. Add the eggs and vanilla, beating well. Gradually add the dry ingredients, then the oats; beat just to blend. Stir in the cinnamon chips and raisins.
- Spread the batter into the prepared pan. Bake on center oven rack about 25 to 30 minutes, or until golden on top and done in the center. Cool on a rack before cutting.
Makes 24 bars.
