    Oatmeal Cinnamon Chip Bar Cookies

    • Nonstick cooking spray
    • 1-1/2 cups all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp ground nutmeg
    • 1/4 tsp ground cinnamon
    • 1/8 tsp ground allspice
    • 1 cup (2 sticks) butter or margarine, softened
    • 1 cup packed light brown sugar
    • 1/3 cup granulated sugar
    • 2 eggs
    • 1-1/2 tsp vanilla extract
    • 2-1/2 cups quick-cooking oats
    • 1 (10-ounce) pkg. cinnamon chips
    • 3/4 cup raisins


    Instructions


    1. Spray a 9x13-inch baking pan with cooking spray and set aside. Preheat oven to 350 degrees (F).

    2. Sift together the flour, soda, nutmeg, cinnamon and allspice; set aside. With an electric mixer on medium speed, cream together the butter and sugars. Add the eggs and vanilla, beating well. Gradually add the dry ingredients, then the oats; beat just to blend. Stir in the cinnamon chips and raisins.

    3. Spread the batter into the prepared pan. Bake on center oven rack about 25 to 30 minutes, or until golden on top and done in the center. Cool on a rack before cutting.

      Makes 24 bars.
