Peaches-and-Cream Bars

"Peaches are one of our favorite ingredients to cook with. Big, fuzzy orange globes dripping with sweet nectar -- delicious! We pile them into a sweet bar complete with creamy filling and a brown-sugar butter streusel that is good enough to eat alone. (But it's better with the peaches.)"
List of Ingredients
° 3 peaches, peeled and sliced
° 4 ounces cream cheese, softened
° â…“ cup powdered sugar
° 1 egg, beaten
° ½ tsp vanilla
° ½ tsp salt
° 1 cup all-purpose flour
° 1 cup quick oats
° 1 tsp baking soda
° ¾ cup (1½ sticks) unsalted butter, melted and cooled
° ¾ cup brown sugar
Recipe
Preheat oven to 350 degrees F. Coat an 8x8-inch baking dish with nonstick cooking spray.
In a medium bowl, with an electric hand mixer, combine the cream cheese, powdered sugar, egg, and vanilla until smooth. Set aside.
In a separate bowl, whisk together salt and flour. Add the oats, baking soda, melted butter, and brown sugar. Stir with a wooden spoon until everything is moist.
Press half of the oats mixture into the baking dish and bake 8 minutes. Remove from the oven and allow to cool 10 to 15 minutes.
Spread the cream cheese mixture over the bottom and layer with sliced peaches. Sprinkle the remaining crumble mixture over the top and bake an additional 15 minutes. Cool, then chill in refrigerator until ready to serve.
