"Sarah Virden works with me long hours and for days on end with a smile on her face and is pretty much perfect. The only thing I can find wrong with her is that she doesn't like peanut butter and chocolate together. What kind of an animal doesn't like peanut butter and chocolate? I still cannot comprehend; it's just beyond me. This recipe is single-handedly responsible for thirty pounds of the eighty-pound weight gain I had with my first child. This same child used to wander around the house telling anyone who would listen that she needed a 'banilla wafer' over and over again in the most pitiful voice until you just couldn't help but give in. Heck, by the end of the day I would just give her the box to carry around with her."

â—¦ 1 (1-pound) package powdered sugar
â—¦ 8 ounces (1 cup) salted butter, softened
â—¦ 1 cup creamy peanut butter
â—¦ 1 ½ cups crushed vanilla wafers (about 30 cookies)
â—¦ ½ cup heavy cream
â—¦ 1 (12-ounce) package semisweet chocolate chips
Recipe
Beat the powdered sugar, butter, and peanut butter in the bowl of a stand mixer fitted with the paddle attachment at medium speed. Add the crushed vanilla wafers, and beat until well blended, scraping down the sides as needed (the mixture will be stiff). Press the mixture into an ungreased 13 by 9-inch baking dish. Chill 10 minutes.
Place the cream in a medium saucepan over medium, and cook, stirring often, until warm, about 5 minutes. Remove from the heat; add the chocolate chips, and stir until melted. Pour the chocolate over the peanut butter mixture, and spread to coat evenly.
Chill until firm, about 30 minutes.
Cut into bars.
