Raspberry Mazurkas

- Nonstick cooking spray
- 3 cups all-purpose flour
- 1-1/2 cups brown sugar
- 1-1/2 cups old-fashioned oats
- 1/2 cup walnuts, finely chopped
- 1 cup flaked coconut
- 1/2 tsp salt
- 2-1/2 sticks margarine, melted
- 1 (18-oz.) jar raspberry preserves
Instructions
- Coat a 9x13-inch baking pan with cooking spray and set aside. Preheat oven to 350 degrees (F).
- In a large bowl, combine the flour, brown sugar, oats, walnuts, coconut and salt. Pour melted margarine over the mixture; mix with clean hands until well combined.
- Press half of the mixture into the bottom of the prepared pan. Spread the preserves on top, leaving a 1/2-inch border around pan. Spread remaining crumb mixture on top evenly, pressing down lightly. Bake 25 to 30 minutes, until golden brown. Cool on a rack before cutting into bars.
Makes 24 bars.
Note: These bars freeze well.
