    Southwest Buttermilk Brownies

    List of Ingredients


    • 1 stick butter or margarine
    • 1 cup boiling water
    • 1/4 cup cocoa
    • 1 cup vegetable oil
    • 2 cups sugar
    • 2 eggs, beaten
    • 1 tsp vanilla extract
    • 1/2 cup buttermilk
    • 2 cups all-purpose flour
    • 1/2 tsp salt
    • 1 tsp baking soda
    • *
    • -- For the Frosting --
    • 1 stick butter or margarine
    • 1/4 cup cocoa
    • 1/3 cup buttermilk
    • 3 cups confectioners' sugar
    • 1 tsp vanilla extract


    Instructions


    1. Preheat oven to 350 degrees. In a saucepan, combine butter, boiling water, cocoa, and oil. Bring to a boil. Set aside.

    2. Beat together sugar, eggs, vanilla, buttermilk, flour, salt and soda. Combine with hot mixture. Pour into a greased jellyroll pan. Bake for 25 minutes.

    3. To make the frosting, combine butter, cocoa, and buttermilk in a saucepan and bring to a boil. Remove from heat and add sugar and vanilla. Spread over brownies. Sprinkle nuts on top.
