    Sunburst Lemon Bars

    List of Ingredients


    • -- Base --
    • 2 cups all-purpose flour
    • 1/2 cup powdered sugar
    • 1 cup butter (or margarine), softened
    • *
    • -- Filling --
    • 4 eggs, slightly beaten
    • 2 cups sugar
    • 1/4 cup all-purpose flour
    • 1 tsp baking powder
    • 1/4 cup lemon juice
    • *
    • -- Frosting --
    • 1 cup powdered sugar
    • 2 to 3 Tbsp lemon juice


    Instructions


    1. Heat oven to 350 degrees (F). In large bowl, combine all base ingredients; beat at low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9-inch pan. Bake for 20 to 30 minutes or until light golden brown.

    2. Meanwhile, in large bowl, combine all filling ingredients except lemon juice; blend well. Stir in 1/4 cup lemon juice.

    3. Remove pan from oven. Pour filling over warm base. Bake an additional 25 to 30 minutes or until light golden brown. Cool for 1 hour or until completely cooled.

    4. In small bowl, combine 1 cup powdered sugar and enough lemon juice for desired spreading consistency; blend until smooth. Frost cooled bars.

      Cut into bars.

      If desired, sprinkle with powdered sugar; garnish with lemon peel.

      Yield: 36 bars
