Bacon-Blue Cheese Stuffed Burgers

List of Ingredients
- 1 ½ pounds lean ground beef (90% lean)
- 3 ounces cream cheese, softened
- â…“ cup crumbled blue cheese
- â…“ cup bacon bits
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon pepper
- 1 pound sliced fresh mushrooms
- 1 tablespoon olive oil
- 1 tablespoon water
- 1 tablespoon Dijon mustard
- 4 whole-wheat hamburger buns, split
- ¼ cup mayonnaise
- 4 romaine leaves
- 1 medium tomato, sliced
Instructions
- Shape beef into eight thin patties. Combine the cream cheese, blue cheese, and bacon bits; spoon onto the center of four patties. Top with remaining patties and press edges firmly to seal. Combine the salt, garlic powder, and pepper; sprinkle over the patties.
- Grill burgers, covered, over medium heat or broil 4 inches from the heat on each side until a thermometer reads 160° F and juices run clear, 5 to 7 minutes.
- Meanwhile, in a large skillet, sauté mushrooms in oil until tender. Stir in water and mustard. Serve burgers on buns with mayonnaise, romaine, tomato, and mushroom mixture.
Makes 4 burgers
• Herb and Cheese-Stuffed Burgers:
Omit blue cheese and bacon bits. Mix cream cheese with ¼ cup shredded Cheddar cheese, 2 tablespoons minced fresh parsley, and 1 teaspoon Dijon mustard. Season meat with ¾ teaspoon crushed dried rosemary and ¼ teaspoon dried sage leaves. Proceed as recipe directs.
• Greek-Stuffed Burgers:
Omit cream cheese, blue cheese, and bacon bits. Mix â…“ cup feta cheese and bacon bits. Mix â…“ cup feta cheese, â…“ cup chopped tomato, 2 tablespoons chopped red onion, 4 teaspoons chopped ripe olives, 2 teaspoons olive oil and ¼ teaspoon dried oregano. Stuff burgers with feta mixture and proceed as recipe directs.
