Chicken Chive Burgers

"This burger is made from ground chicken that's spiked with chives, lemon juice, bread crumbs, and Dijon mustard to build a flavorful, juicy patty. For a completely healthy menu, add Baked Potato Poppers in place of deep-fried French fries."

â—¦ 1 ½ pounds ground chicken (light and dark meat)
â—¦ 1 teaspoon coarse salt
â—¦ ¼ teaspoon freshly ground black pepper
â—¦ 1 teaspoon Dijon mustard
â—¦ â…“ cup fresh bread crumbs
â—¦ 2 tablespoons fresh lemon juice
â—¦ 2 tablespoons chopped fresh chives
â—¦ 4 slices Fontina cheese (optional)
â—¦ 4 whole-wheat hamburger buns
â—¦ Optional garnishes: sliced tomato, sliced red onion, lettuce, mayo, Dijon mustard, and/or pickles
Recipe
Preheat an outdoor grill or a grill pan to medium-high heat.
Combine the chicken, salt, pepper, mustard, bread crumbs, lemon juice, and chives in a large bowl. Form into four ½-inch-thick patties.
Grill the patties, flipping once, until the juices run clear (the center should register 160° F on an instant-read thermometer), 8 to 10 minutes. Top the patties with the cheese, if using, during the last minute of cooking, and cover the grill or pan to melt it.
Meanwhile, lightly grill the cut sides of the buns, if desired.
Serve with any or all of the garnishes.
