â—¦ 1 onion, chopped fine
â—¦ Pinch salt
â—¦ 1 clove garlic, minced
â—¦ 1 teaspoon chili powder
â—¦ 1 ¼ cups ketchup
â—¦ 6 tablespoons molasses
â—¦ 3 tablespoons cider vinegar
â—¦ 2 tablespoons Worcestershire sauce
â—¦ 2 tablespoons Dijon mustard
Recipe
Heat oil in medium saucepan over medium heat until shimmering. Add onion and salt and cook until onion is softened, about 5 minutes. Stir in garlic and chili powder and cook until fragrant, about 30 seconds.
Whisk in ketchup, molasses, vinegar, Worcestershire, and mustard. Bring sauce to simmer and cook, stirring occasionally, until thickened and reduced to about 2 cups, about 25 minutes.
Let barbecue sauce cool slightly, then transfer to airtight container and let cool to room temperature. (Barbecue sauce can be refrigerated for up to 4 days.)
Makes about 2 cups
