    Essentials: Cherry Cola Barbecue Sauce

    List of Ingredients


    • 1 tablespoon unsalted butter
    • 1 cup finely chopped yellow onion
    • 3 cloves garlic, minced or pushed through a press
    • 3 cups ketchup
    • 2 ½ cups cherry cola (not diet)
    • ½ cup packed light brown sugar
    • ½ cup cherry preserves
    • ¼ cup red wine vinegar
    • 2 teaspoons prepared chili powder
    • ¼ teaspoon ground cayenne pepper


    Instructions


    1. In a saucepan over medium heat, melt the butter. Add the onion and garlic and cook until slightly softened, 5 to 6 minutes, stirring occasionally.

    2. Whisk in the remaining ingredients. Increase the heat to medium-high and bring to a boil, and then reduce the heat to medium-low and simmer, uncovered, until the mixture thickens and is reduced to 4 cups, 45 to 55 minutes, stirring occasionally.

    3. Serve warm; or cool completely and transfer to a covered container. The sauce can be refrigerated for up to 1 month. Reheat before serving.

      Makes about 4 cups
