Recipe Introduction
"Creamy, tangy mayonnaise adds fantastic flavor to any burger and is super easy to make from scratch. This versatile spread may seem mysterious, but it's actually made from a simple emulsification of egg yolks and oil. The egg yolks in this recipe are not cooked. If you prefer, ¼ cup Egg Beaters may be substituted."

â—¦ 2 large egg yolks
â—¦ 4 teaspoons lemon juice
â—¦ 1 tablespoon water, plus extra as needed
â—¦ ¼ teaspoon Dijon mustard
â—¦ ¼ teaspoon salt
â—¦ â…› teaspoon sugar
â—¦ ¾ cup vegetable oil
Recipe
Process egg yolks, lemon juice, water, mustard, salt, and sugar in blender until combined, about 10 seconds, scraping down sides of blender jar as needed.
With blender running, slowly add oil and process until mayonnaise is emulsified, about 2 minutes.
Adjust consistency with extra water as needed. Season with salt and pepper to taste. (Mayonnaise can be refrigerated in airtight container for up to three days.)
Makes about ¾ cup
VARIATIONS:
• Lemon-Garlic Mayonnaise:
Increase lemon juice to 2 tablespoons. Add 1 minced garlic clove and ¼ teaspoon lemon zest to blender with egg yolks.
• Smoked Paprika Mayonnaise:
Add 2 teaspoons smoked paprika, 1 minced garlic clove, and pinch cayenne pepper to blender with egg yolks.
• Herbed Mayonnaise:
Add 2 tablespoons chopped fresh basil, 1 tablespoon chopped fresh parsley, and 1 tablespoon minced fresh chives to mayonnaise and pulse until combined but not smooth, about 10 pulses.
• Spicy Chipotle-Lime Mayonnaise:
Substitute lime juice for lemon juice. Add 1 tablespoon minced canned chipotle chile in adobo sauce and 1 minced garlic clove to blender with egg yolks.
