    Essentials: Tzatziki Sauce

    List of Ingredients


    • ½ English cucumber, coarsely grated on the large holes of a box grater
    • 1 cup plain Greek yogurt
    • 2 tablespoons finely chopped fresh mint leaves
    • 1 tablespoon fresh lemon juice
    • 2 teaspoons extra-virgin olive oil
    • 1 medium clove garlic, minced or pushed through a press
    • ½ teaspoon kosher salt
    • ¼ teaspoon freshly ground black pepper


    Instructions


    1. Place the grated cucumber in a strainer and press firmly to squeeze out the excess liquid. Discard the liquid.

    2. Transfer the cucumber to a small bowl.
      Add the remaining ingredients and stir to combine. Serve; or cover and refrigerate for up to four hours.

      Makes about 1 ½ cups
