    Golden Onion & Swiss Burgers

    List of Ingredients


    • 2 Tbsp butter, divided
    • 1 large sweet onion, such as Spanish or Vidalia, very thinly sliced
    • Salt
    • 1 lb. lean ground beef
    • 1 cup shredded Swiss cheese
    • 1 Tbsp Dijon mustard
    • 1 tsp salt
    • 1/2 tsp freshly ground pepper
    • 1/2 tsp chopped fresh thyme
    • 8 slices rye bread
    • 1 large beefsteak tomato, sliced


    Instructions


    1. Heat 1 tablespoon of the butter in a 12-inch nonstick pan over medium heat. Add onion and cook 18 to 20 minutes, until browned and very tender, stirring occasionally. Add a pinch of salt.

    2. Toss beef with cheese, mustard, salt, pepper, and thyme; shape into four 1/2-inch-thick patties.

    3. Heat a grill pan or cast-iron skillet. Grill patties 5 to 6 minutes per side, until done (160 degrees F on an instant-read thermometer inserted into side of burger).

    4. Heat a large nonstick skillet over medium heat. Spread the remaining 1 tablespoon butter evenly over 1 side of bread slices. Place 2 slices, buttered side down, in skillet and cook about 1 minute, until toasted. Spread onion topping on untoasted side of bread; add tomato and burger. Top each with another bread slice, buttered side out. Turn and toast other side. Repeat with remaining bread slices, onion, tomato, and burgers.

      Makes 4 servings.
