Golden Onion & Swiss Burgers

List of Ingredients
- 2 Tbsp butter, divided
- 1 large sweet onion, such as Spanish or Vidalia, very thinly sliced
- Salt
- 1 lb. lean ground beef
- 1 cup shredded Swiss cheese
- 1 Tbsp Dijon mustard
- 1 tsp salt
- 1/2 tsp freshly ground pepper
- 1/2 tsp chopped fresh thyme
- 8 slices rye bread
- 1 large beefsteak tomato, sliced
Instructions
- Heat 1 tablespoon of the butter in a 12-inch nonstick pan over medium heat. Add onion and cook 18 to 20 minutes, until browned and very tender, stirring occasionally. Add a pinch of salt.
- Toss beef with cheese, mustard, salt, pepper, and thyme; shape into four 1/2-inch-thick patties.
- Heat a grill pan or cast-iron skillet. Grill patties 5 to 6 minutes per side, until done (160 degrees F on an instant-read thermometer inserted into side of burger).
- Heat a large nonstick skillet over medium heat. Spread the remaining 1 tablespoon butter evenly over 1 side of bread slices. Place 2 slices, buttered side down, in skillet and cook about 1 minute, until toasted. Spread onion topping on untoasted side of bread; add tomato and burger. Top each with another bread slice, buttered side out. Turn and toast other side. Repeat with remaining bread slices, onion, tomato, and burgers.
Makes 4 servings.
