Italian Burgers

Cooking With Mick Rosacci
List of Ingredients
- 3/4 lb. ground beef (85% to 90% lean)
- 3/4 lb. Italian sausage
- 1 tsp Italian herb blend
- 1 small tomato, minced
- 1/2 cup bread crumbs
- Seasoning salt
- 8 slices aged Provolone
- 1 clove garlic
- 1 Tbsp olive oil
- Italian Focaccia or Ciabatta bread
- Roasted red peppers, lettuce, and marinara (opt.)
Instructions
- Remove Italian sausages from casings and place in a bowl with the ground beef, Italian herb blend, finely minced tomato and bread crumbs. Mix by hand to combine well but do not over-mix.
- Hand roll the meat into a cylinder 3 to 4 inches thick, using butcher paper to shape and roll even tighter. With a sharp knife, cut into 4 to 6 slices of even thickness and pat each in your hand to confirm even compression. Lay on a plate and sprinkle lightly with seasoned salt.
- Crush garlic and combine with oil. Cut Italian loaf into serving slices and split open, brushing inside surface with garlic oil. Grill burgers over a hot flame for 3 to 4 minutes or until well-browned. Turn and repeat on second side. When well-browned on both sides, top with cheese. Reduce grill to low and cover until cheese is melted and meat reaches 165 to 170 degrees internal. Meanwhile, toast the bread on the grill.
- Remove from the grill to a serving platter and serve on toasted bread as is or with roasted red pepper, lettuce, and marinara.
