    Southwest Burger

    List of Ingredients


    • 3 large poblano chiles
    • 1 1/4 lbs. lean ground beef
    • 1/4 cup chopped fresh cilantro
    • 2 Tbsp coarsely grated onion
    • 1 tsp salt
    • 1/2 tsp freshly ground pepper
    • 1/4 lb. Monterey Jack cheese, sliced
    • Salsa or catsup (optional)
    • 4 kaiser rolls, toasted


    Instructions


    1. Heat broiler. Place chiles on a foil-lined cookie sheet. Broil 3 inches from heat 10 to 15 minutes, turning occasionally, until skins are bubbly and evenly charred. Immediately transfer chiles to a large resealable plastic storage bag and seal. Let stand 10 to 15 minutes until chiles are cool enough to handle. Remove skins from chiles, seed, and cut into strips.

    2. Meanwhile, toss ground beef with cilantro, onion, salt, and pepper; shape into four 1/2-inch-thick patties.

    3. Heat grill pan or cast-iron skillet. Grill patties 5 to 6 minutes per side, until an instant-read thermometer inserted into side of burger registers 160 degrees F (for medium).

    4. Top each burger with cheese; remove from heat. Cover pan and let stand 1 minute until cheese is melted.

    5. To serve: Place burgers, chile strips and salsa (if desired), on bottom half of rolls; add top half of rolls.

      Serves 4
