    Turkey Burgers with Cheddar and Barbecue Aïoli

    Recipe Introduction

    "Most turkey burgers tend to be kind of boring, quite flavorless, and dry. Not this one! We put plenty of Margaritaville House Spice Blend both into and on top of the burgers and top them with extra-sharp cheese and lots of barbecue aïoli. The result is a juicy, can't-put-it-down burger that will satisfy even the most red meat-loving eaters."

    List of Ingredients

    • ¼ cup barbecue sauce
    • ¼ cup mayonnaise
    • 1 tsp cayenne pepper
    • 1½ pounds ground turkey (preferably dark meat)
    • 2 Tbsp Margaritaville House Spice Blend (recipe follows)
    • 2 Tbsp neutral oil (such as canola or vegetable)
    • 4 burger buns, split and lightly toasted
    • 4 slices extra-sharp Cheddar cheese
    • 4 large Bibb or green-leaf lettuce leaves
    • 8 large tomato slices
    • 8 very thin slices raw red onion

    Recipe

    Place the barbecue sauce, mayonnaise, and cayenne in a small bowl and whisk together. Set aside.

    Place the ground turkey into a large bowl, sprinkle with 1 tablespoon of the spice blend, and mix well to combine. Divide the turkey into four even portions and shape each into a patty. Sprinkle both sides of each burger with some of the remaining spice blend.

    Place the oil in a large cast-iron skillet that can hold the burgers in a single layer (or work in batches or use two skillets). Set the skillet over medium-high heat and turn your exhaust fan on. Once the skillet is hot, place the burgers in the skillet and cook until the bottoms are nicely browned, about 4 minutes.

    Carefully turn the burgers and cook until the second side is nicely browned and the burgers are firm to the touch, 4 minutes more. Top each burger with a slice of Cheddar, reduce the heat to low, cover the skillet, and cook until the cheese has melted, 1 minute more.

    Divide the barbecue aïoli among the buns and spread to cover both cut sides of each. Put a slice of leaf lettuce on the bottom half of each burger bun and top with a turkey burger. Top each one with 2 slices each onion and tomato. Close the burgers and serve immediately.

    Serves 4


    Margaritaville House Spice Blend

    • 2 Tbsp onion powder
    • 2 Tbsp garlic powder
    • 1 Tbsp kosher salt
    • 1 Tbsp ground cumin

    Place all the ingredients in a bowl and whisk together.
