    Butter: Caramel Apple Butter

    From "The Inn Country Chefs Cookbook"


    List of Ingredients


    • 1 cup sugar
    • 1/2 cup water
    • 1/2 lb. butter, cut into chunks
    • 1/2 lb. apples, unpeeled and chopped


    Instructions


    1. Place sugar and water in a heavy medium saucepan and heat over medium heat until ingredients melt together. Continue heating mixture as water evaporates and the melted sugar begins to caramelize.

    2. When the caramel is a deep golden brown, add butter chunks and the chopped apples. Stir frequently and continue cooking until the apples are mushy, about 10 minutes.

    3. Place hot mixture in a blender and carefully puree until very smooth.

    4. Strain mixture. Transfer to a storage container and refrigerate until chilled.
