Recipe Introduction
"Making flavored butter is so easy and a great way to gussy up store-bought baked goods. All you have to do is take a stick of butter out of the refrigerator and let it come almost to room temperature. Then whip it in a food processor, or in a mixer with a whip attachment, to aerate it and make it fluffy and then add the flavoring. After the butter and the flavoring are thoroughly blended together, use a rubber spatula to pack the flavored butter into a ceramic ramekin. Smooth the surface and chill the butter until you're almost ready to serve. Remove it from the refrigerator 15 to 30 minutes before serving time, so it's easy to spread."

• Orange Butter:
Whip ½ cup (1 stick) unsalted butter with ½ teaspoon grated orange zest.
• Lemon Butter:
Whip ½ cup (1 stick) unsalted butter with ½ teaspoon grated lemon zest.
• Strawberry Butter:
Purée 2 hulled medium-sized strawberries with ½ cup (1 stick) unsalted butter.
• Raspberry Butter:
Purée 8 to 10 raspberries with ½ cup (1 stick) unsalted butter.
• Blackberry Butter:
Purée 5 to 6 blackberries, and whip with ½ cup (1 stick) unsalted butter.
