    Butter: Pine Nut Butter

    List of Ingredients


    • 1/2 cup pine nuts, toasted
    • 6 Tbsp unsalted butter, softened
    • 1 tsp lemon zest
    • 1/2 tsp chopped fresh rosemary
    • 1/4 tsp freshly ground black pepper
    • 1/4 tsp salt


    Instructions


    1. Chop half of the pine nuts.

    2. Combine the whole and chopped pine nuts and the remaining ingredients in the bowl of an electric mixer with the paddle attachment. Remove to a small bowl. Use as desired.

      (Can be made a few days ahead, wrapped in the refrigerator; or held for a few weeks in the freezer.)
