    Butter: Pineapple Butter

    List of Ingredients


    • 8 ounces unsalted butter
    • 2 ounces fresh pineapple chopped into half-inch pieces
    • 3 Tbsp unsweetened pineapple juice, warmed
    • 2 Tbsp pineapple-apricot preserves


    Instructions


    1. Put butter into a stand mixer and whip on low speed with paddle attachment until light and fluffy.

    2. In a food processor, puree the fresh pineapple, juice, and preserves.

    3. Add and blend pineapple puree in whipped butter and continue to whip for another 3 to 4 minutes.

      Try this with pancakes or waffles.
