Butter: Pineapple Butter

- 8 ounces unsalted butter
- 2 ounces fresh pineapple chopped into half-inch pieces
- 3 Tbsp unsweetened pineapple juice, warmed
- 2 Tbsp pineapple-apricot preserves
Instructions
- Put butter into a stand mixer and whip on low speed with paddle attachment until light and fluffy.
- In a food processor, puree the fresh pineapple, juice, and preserves.
- Add and blend pineapple puree in whipped butter and continue to whip for another 3 to 4 minutes.
Try this with pancakes or waffles.
