Spread: Foster's Pimiento Cheese Spread

List of Ingredients
- 1 cup (4 ounces) grated sharp Cheddar cheese
- 1½ cups (6 ounces) grated Parmesan cheese
- 1 cup (4 ounces) grated smoked Gouda cheese
- 1 jar roasted red peppers, drained and chopped
- 1 cup mayonnaise
- 1 or 2 jalapeño peppers, seeded and finely chopped
- 1 Tbsp cider vinegar
- 1 Tbsp honey
- 1 tsp each salt and black pepper
Instructions
- Mix together the Cheddar, Parmesan, Gouda cheeses and roasted peppers in a large bowl.
- In a separate bowl, combine the mayonnaise, jalapeño, vinegar, honey, salt and pepper, and stir well. Stir the mayonnaise mixture into the cheese mixture and mix well. Season the cheese mixture with additional salt and pepper, if desired. Refrigerate in an airtight container until ready to use. (This cheese spread will keep, covered tightly in the refrigerator, up to 1 week.)
Makes 4 cups.

Testing Notes
"I substituted pickled jalapeño slices for the fresh jalapeño. I rinsed the slices and patted them dry to get 2 tablespoons of chopped jalapeño. I also substituted cane vinegar for the cider vinegar, and cane syrup for the honey. I served the spread with crackers, toasted French bread slices, and toasted rye and raisin bread slices. The rye and raisin breads were outstanding with the spread."
