Spread: Sun-Dried Tomato Spread

- 1 pound cream cheese, room temperature
- 1½ cups sour cream
- 3 Tbsp finely grated Parmigiano-Reggiano
- 2 medium cloves garlic, minced (1 tsp)
- ½ tsp salt, or to taste
- ¼ tsp ground white pepper
- 1 jar (7 ounces) sun-dried tomatoes, packed in oil, drained, blotted dry with paper towel and chopped (1 cup)
- 2 green onions, trimmed and chopped (green part of one), reserved for garnish

- Raw veggies, crackers or baguette slices for dipping and spreading
Instructions
- In medium bowl, cream the cream cheese; gradually stir in the sour cream until smooth and fully blended. Stir in grated cheese, garlic, salt and pepper. Gently fold in tomatoes and green onions. Transfer to a serving bowl, and garnish with the reserved green onion.
Makes about 3½ cups (50 servings)
Final Comments
This dip can be made a day ahead. Garnish just before serving.
